Canning Peaches
Canning peaches is a healthy choice as it enhances the availability of key nutrients such as antioxidants, vitamin C, and folate, while also preserving other valuable compounds. Additionally, canned peaches provide fiber, potassium, and vitamins A, C, and E
Instructions
Ensure that both the jars and their rings are thoroughly cleaned and sterilized. Make certain you have fresh, unused lids for an effective seal.
Pour in sufficient water to submerge the jars by 1-2 inches once they are placed in the water. Set it on the stove and heat the water until it boils, then reduce it to a gentle simmer.
Fill a large pot with water and bring it to a gentle boil. Add the peaches to the pot for approximately 30 seconds (you can do this in batches if necessary). This method will help to loosen the skins, making them much easier to peel. Afterward, transfer the peaches to a bowl of ice water, then peel them. The skin should come off effortlessly. Remove the pit and slice them into chunk.
You can fill the jars generously, then gently tap them on the countertop to help the peaches settle.
To prepare light syrup, combine 2 cups of sugar with 6 cups of very hot water. Mix thoroughly to ensure the sugar dissolves. Pour some of the simple syrup into each jar, making sure to leave 1/2'' of space at the top. You can use a bubble popper to remove any air bubbles (avoid using anything metal as it could scratch the glass jar.


Wipe the rims of the jars with a clean rag. Ensure that a clean lid is fastened securely on top of each jar. Secure them with the rings.
Carefully place the jars onto the jar rack Then slowly place the rack into the hot water bath. If necessary, add more water to the canner to ensure the tops of the jars are covered. Cover with the lid and return the water to a boil. Once it reaches a boil, process the jars for 25 minutes.
After several hours, check the seals to ensure they sealed correctly before storage. When you press down in the center of the lid, it should remain sealed. If you hear or feel it pop back at all, it indicates a poor seal. Also, confirm that the peaches are still submerged in liquid and maintain a vibrant color.
