Chamomile Honey


Chamomile honey is a delightful and simple treat to prepare, and it adds a unique flavor to both tea and baked goods. The soothing qualities of chamomile combined with the natural sweetness of honey create a perfect blend that enhances various recipes. One of my favorite ways to use chamomile honey is by incorporating it into a white bread recipe. The honey not only adds a subtle floral note but also helps to keep the bread moist and tender. Each slice carries a hint of chamomile that elevates the taste, making it an excellent accompaniment to morning tea or as a standalone snack. Whether you're a seasoned baker or just starting, chamomile honey is a wonderful ingredient to experiment with in the kitchen.
What you will need
A glass jar with a lid
Honey ( I like to use local honey)
Dried chamomile - you will need enough to fill your jar half way full.


To begin the process, take a jar and fill it halfway with dried chamomile flowers. Once the jar is prepared, pour honey into it, filling it to about an inch from the top. It's normal for the honey to rest on the surface of the chamomile, so don't worry if it doesn't immediately mix. To help the honey reach the bottom and integrate with the chamomile, use a knife to gently poke through the flowers. This will allow the honey to seep down, ensuring that the flavors meld beautifully over time.
To create a delightful infused honey, start by allowing the mixture to infuse for 3 to 4 weeks. During this period, if you notice the herbs floating to the top, gently turn the jar over a few times to ensure they remain well coated in the honey. For optimal results, consider placing the jar in a sunny window sill, as this warmth helps keep the honey runny. Alternatively, if you prefer a cooler dark space, be prepared to use a double boiler to make pouring the honey into a clean new jar easier. After the infusion period has elapsed, simply strain the honey to remove the herbs and transfer it into your chosen jar.
Once complete, your jar will be filled with a delightful infusion, perfect for sweetening teas or enjoying on its own.
